8 rib lamb chops (about 1½ pounds)
1 tablespoon olive oil
1 can (10¾ ounces) condensed cream of onion soup
1 cup chopped canned tomatoes
2 large cloves garlic, minced
1 small bay leaf
1/8 teaspoon paprika
1/8 teaspoon thyme leaves, crushed
¼ pound pepperoni, sliced (about 1 cup)
Lemon slices (for garnish)

How To Cook: |
|
|
1. Brown lamb chops in oil in ovenproof skillet; pour off fat.
|
2. Blend in soup, tomatoes, garlic, bay leaf, paprika and thyme.
|
3. Cover and bake in preheated 350° oven 25 minutes; add pepperoni and bake 10 minutes longer, or until done.
|
4. Remove bay leaf; garnish with lemon slices.
|
