Lamb Chops In Tomato Sauce
What You Need:
  • 8 rib lamb chops (about 1½ pounds)
  • 1 tablespoon olive oil
  • 1 can (10¾ ounces) condensed cream of onion soup
  • 1 cup chopped canned tomatoes
  • 2 large cloves garlic, minced
  • 1 small bay leaf
  • 1/8 teaspoon paprika
  • 1/8 teaspoon thyme leaves, crushed
  • ¼ pound pepperoni, sliced (about 1 cup)
  • Lemon slices (for garnish)

  • How To Cook:
    1. Brown lamb chops in oil in ovenproof skillet; pour off fat.

    2. Blend in soup, tomatoes, garlic, bay leaf, paprika and thyme.

    3. Cover and bake in preheated 350°F oven 25 minutes; add pepperoni and bake 10 minutes longer, or until done.

    4. Remove bay leaf; garnish with lemon slices.

    To Serve: 4
