2 packages (10 ounces each) frozen baby lima beans, well cooked and drained
2 tablespoons finely chopped onion
1/8 teaspoon thyme leaves, crushed
1 medium clove garlic, minced
2 tablespoons butter or margarine
1 can (10¾ ounces) condensed chicken broth
1 can (10½ ounces) condensed beef broth
1½ soup cans water
1 cup diced tomatoes

How To Cook: |
|
|
1. Mash 2 cups lima beans with a fork; set aside.
|
2. Cook onion with thyme and garlic in butter in a saucepan until tender.
|
3. Blend in remaining lima beans, mashed limas, broths, water and tomatoes; simmer a few minutes to blend flavors, stirring occasionally.
