1. Mix the oil, bulgur, and onion and cook in an uncovered casserole 5 minutes, stirring occasionally.
2. Carefully add a little broth at a time so as not to crack the casserole.
3. When all the broth is mixed in, add the oregano, salt, and pepper.
4. Cover and cook, stirring occasionally, until the liquid is absorbed and the bulgur is tender (about 11 minutes).
5. Let stand 5 minutes.
TIP:
For variety, add chopped green pepper, sliced mushrooms, almonds, pine nuts, raisins, currants, or any combination of these. Serve Bulgur Pilaf with chicken, lamb, pork, and other meats.
