The Hawaiians eat enormous amounts of fresh fish, and they eat it raw. They seem to have been doing this since the olden days, and the methods of preparation are ingenious. Note that in this recipe the lime juice sort of "cooks" or firms the fish.

What You Need:            (To Serve: 8)

  • 1 pound whitefish (cod, snapper, or halibut), very fresh, skinless and boneless, cut into ½-inch cubes
  • 1 teaspoon kosher salt
  • Juice of 2 limes
  • 1 clove garlic, peeled and crushed
  • 3 scallions, chopped
  • 1 cup canned coconut milk
  • ¾ cup peeled and chopped white onion

    GARNISH
  • Toasted sesame seeds

  • How To Cook:
    1. Place the fish in a stainless-steel or glass bowl.

    2. Mix salt and lime juice and toss with the fish.

    3. Allow to marinate for 4 hours in the refrigerator.

    4. Remove and drain the fish. Add the remaining ingredients and toss well.

    5. Chill again before serving. Garnish with sesame seeds.
