The sauce is simple, the meat is tender, and the result is just great. You can use this sauce on other meats.

What You Need:            (To Serve: 4 - 6, about 2 cups sauce)

THE BEEF
  • 4 pounds of beef barbecue ribs

    KOREAN BARBECUE SAUCE
  • 1 cup soy sauce
  • ¼ cup sake or dry sherry
  • 4 slices ginger (about the size of a 25-cent piece), julienned
  • 2 cloves garlic, peeled and very thinly sliced tablespoons sugar
  • ¾ cup apple juice concentrates (No water added!)
  • 3 tablespoons sesame oil

  • How To Cook:
    THE BEEF:
    1. Purchase 4 pounds of beef barbecue ribs cut across the grain into 2-inch pieces, Korean or Japanese style.

    2. Your butcher will understand. Have the butcher cut them about ¼ inches thick.

    3. Rub each rib with sesame oil and then marinate in a bit of Korean Barbecue Sauce.

    4. Grill the ribs over high heat or charcoal, turning once, until tender. Do not overcook this delicacy.

    KOREAN BARBECUE SAUCE:
    1. Place all the ingredients but the sesame oil in a saucepan and bring to a simmer.

    2. Cook 10 minutes, uncovered; then remove from the heat and add the sesame oil.

    3. Store in a covered glass or plastic container in the refrigerator.
