The leek is the national symbol of Wales. It is also one of the favorite foods of the Welsh. This vegetable keeps well over the winter in the ground, and it is used to flavor wonderful soups and stews-and, in this case, a pie.

What You Need:            (To Serve: 6)

  • 8 large leeks
  • Bit of butter
  • Some bacon

  • How To Cook:
    1. Slice about leeks (white part only), washing them first very well.

    2. Pan-fry them in a bit of butter until they are tender.

    3. Place them in a pie shell and top with lightly cooked bacon. Add salt and freshly ground black pepper to taste.

    4. Top with another layer of pie dough, and, using a fork, poke a few holes in the top of the dough.

    5. Bake in a preheated oven at 375°F for 30 to 45 minutes.
