What You Need:

  • 2 pounds of chopped callaloo or spinach
  • 2 quarts water
  • 1 pound soup meat
  • 2 slices bacon or a pig's tail
  • 1 pound pre-cooked shrimp
  • 1 dozen okras sliced
  • 1 minced onion
  • 1 diced coco
  • Salt, pepper, herbs, hot pepper to taste

  • How To Cook:
    1. Place meat and bacon in a soup pot with water.

    2. Boil until meat is tender. Add callaloo, okras, coco and seasonings.

    3. Simmer until soup has thickened. Remove hot pepper and meat (or may be left in if desired).

    4. Small flour dumplings (optional) and the shrimps are added. Simmer for 15 minutes longer.
