  • 4 Crown pigeons
  • 4 slices bacon
  • 4 tablespoons butter
  • Pint cream (or evaporated milk)
  • A few black olives
  • Salt and pepper to taste

  • How To Cook:
    1. Cover the breast of each bird with a slice of bacon and season. Place 1 tablespoon butter inside each.

    2. Roast in a hot 400-450F oven for 30 minutes.

    3. Remove birds, drain off surplus fat and add cream to the pan.

    4. Simmer slowly and season to taste. Add olives, and pour over the birds.
