What You Need:

  • 1 pint of red peas (soak overnight)
  • 2 quarts water
  • 1 pound soup meat
  • ¼ pound of pig's tail
  • 1 sliced coco
  • 1 minced onion
  • Salt, thyme, hot pepper to taste

  • How To Cook:
    1. Place peas and meats in water. Boil until peas are almost tender. Add coco and seasonings.

    2. When peas and coco are cooked, remove the meats.

    3. Soup may be served with whole peas, or, put through a colander and discord skins.

    4. Small dumplings are usually added to this soup.
