  • 1 package (9 ounces) artichoke hearts, cooked, halved, and chilled
  • 1 cup cut-up cold, cooked green beans
  • 3 medium-sized cold, cooked potatoes, peeled and quartered
  • 2 large tomatoes, peeled and quartered
  • 2 medium-sized green peppers, cleaned and cut into strips
  • 6 flat anchovy fillets, chopped
  • 12 pitted black olives
  • 1 tablespoon drained capers
  • 1/3 cup olive oil
  • 3 tablespoons wine vinegar
  • ½ teaspoon dried tarragon
  • 2 tablespoons chopped fresh parsley

  • How To Cook:
    1. Place first five ingredients in a large bowl or serving dish.

    2. Top with anchovies, olives, and capers.

    3. Combine remaining ingredients and pour over salad.

    4. Serve at once.
