Celery root is highly prized in Poland as a salad ingredient. Its appealing flavor is enhanced by an herb-flavored oil-vinegar or sour cream dressing. This salad is excellent with meat or game.

What You Need:            (To Serve: 4)

  • 1 small celery root or celeriac
  • Salt
  • ¼ cup salad oil
  • 2 tablespoons cider vinegar
  • 1 teaspoon sugar
  • 2 tablespoons chopped onions
  • 2 tablespoons chopped fresh dill
  • Pepper to taste

  • How To Cook:
    1. Wash celery root well; cut off tops. Peel root and cut into 1-inch cubes.

    2. Cook in a little salted boiling water until just tender, about 15 minutes.

    3. Drain and cool. Put with remaining ingredients in a medium bowl.

    4. Refrigerate 2 to 3 hours to blend flavors.
