What You Need:            (To Serve: 6 - 8)

  • 1 cup raw long-grain rice
  • ½ cup sliced scallions, with some tops
  • 1 medium-sized green pepper, cleaned and chopped
  • 1 cup cold, cooked green peas
  • 1 cup diced celery
  • 1 cup sliced radishes
  • 2 canned pimientos, drained and diced
  • 1/3 cup olive oil
  • 2 to 3 tablespoons wine vinegar
  • ½ teaspoon dried tarragon or basil
  • 3 tablespoons chopped fresh parsley
  • Salt, pepper to taste

  • How To Cook:
    1. Cook rice according to package directions; cool.

    2. Combine with next six ingredients in a large bowl.

    3. Mix together oil, vinegar, herbs, salt, and pepper; add to salad.

    4. Refrigerate until ready to serve.
