An innovative dressing for pasta, vegetable, or seafood salads.

What You Need:            (To Make: about 1¼ cups)

  • 1 small onion, peeled and minced
  • 2 garlic cloves, minced or crushed
  • 12 flat anchovies, with their oil
  • ¼ teaspoon dried basil, thyme, and oregano
  • 1/3 cup wine vinegar
  • 2/3 cup olive oil
  • 1 teaspoon Worcestershire sauce
  • Salt, pepper to taste

  • How To Cook:
    1. Put onion, garlic, anchovies and their oil, and herbs in a mortar or bowl and mash with a pestle or wooden spoon.

    2. Add remaining ingredients and mix with a fork.

    3. Taste before adding salt as anchovies will make the dressing salty.
