What You Need:            (To Serve: 4 - 6)

  • 3 cups cold, cooked dried white beans, navy or pea, or canned beans, drained
  • ½ cup olive oil
  • 3 tablespoons fresh lemon juice
  • ½ cup sliced scallions, with some tops
  • 1/3 cup chopped fresh parsley
  • 2 tablespoons chopped fresh mint
  • ¼ teaspoon ground coriander (optional)
  • Salt, pepper to taste
  • 2 hard-cooked eggs, shelled and cut into quarters
  • 2 tomatoes, peeled and quartered
  • 4 stuffed olives, sliced

  • How To Cook:
    1. Combine beans, oil, lemon juice, scallions, parsley, mint, coriander, salt, and pepper in a large bowl.

    2. Serve garnished with eggs, tomato quarters, and olives.
