In Georgia, winter salads are often made with dried beans, especially kidney beans, which are flavored with unusual seasonings such as those in this dish. Serve with skewered or grilled meat.

What You Need:            (To Serve: 4 - 6)

  • 2 cups cold, cooked or canned kidney beans, drained
  • ½ cup sliced scallions, with some tops
  • 3 tablespoons olive or salad oil
  • 2 tablespoons cider vinegar
  • ½ cup finely chopped walnuts
  • ¼ to ½ teaspoon ground red pepper
  • Salt, pepper to taste
  • 3 tablespoons chopped fresh mint or parsley

  • How To Cook:
    1. Combine ingredients, except mint or parsley, in a medium bowl.

    2. Refrigerate 2 to 3 hours to blend flavors.

    3. Serve sprinkled with mint or parsley.
