What You Need:            (To Serve: 4 - 6)

  • 1 medium-sized head romaine
  • ¼ cup sliced scallions, with some tops
  • 2 hard-cooked eggs, shelled and sliced
  • ½ cup chopped walnuts
  • 2 tablespoons chopped fresh mint
  • ¼ cup olive oil
  • 2 tablespoons fresh lemon juice
  • Salt, pepper to taste

  • How To Cook:
    1. Wash romaine; separate leaves; break into bite-size pieces; dry thoroughly; refrigerate.

    2. When ready to serve, put romaine pieces in a salad bowl.

    3. Add scallions, eggs, walnuts, and mint; toss lightly.

    4. Combine remaining ingredients and pour over salad.

    5. Toss again and serve at once.
