What You Need:            (To Serve: 2 - 4)

  • 2 large bunches fresh parsley
  • 2 to 3 garlic cloves, crushed
  • About 1/3 cup tahini (sesame paste)
  • Juice of 2 large lemons
  • Salt, pepper to taste
  • 2 tablespoons olive oil
  • ½ teaspoon ground red pepper

  • How To Cook:
    1. Wash parsley; remove leaves from stems; dry and chop finely.

    2. Combine parsley with garlic, tahini, lemon juice, salt, and pepper to make a thick, smooth mixture.

    3. Spoon into a shallow bowl and top with oil and red pepper.

    4. Serve at room temperature or refrigerate.

    5. Serve with chunks of white or dark bread.
