What You Need:            (To Serve: 6 - 8)

  • 6 medium-sized potatoes, washed
  • Salt
  • Juice of 2 large lemons
  • 1 cup diced celery
  • ¾ cup diced peeled and seeded cucumber
  • 1/3 cup diced green pepper
  • 1/3 cup chopped fresh parsley
  • Pepper to taste
  • About ¾ cup mayonnaise or salad dressing

  • How To Cook:
    1. Cook potatoes in their jackets in a little salted boiling water until tender, about 25 minutes.

    2. Drain; peel; and cut into 1-inch cubes while still warm.

    3. Put in a bowl and add lemon juice; mix well.

    4. Leave at room temperature for 30 minutes.

    5. Add remaining ingredients, except mayonnaise, and mix well.

    6. Add enough mayonnaise to bind ingredients.

    7. Allow to stand at room temperature to mellow, or refrigerate.
