		2 hard-cooked eggs, shelled and quartered

											|  |  | 1. Combine potatoes, apples, and 1¼ cups green beans in a bowl, bind with mayonnaise. 
 
 |  | 2. Season with salt and pepper. 
 
 |  | 3. Spoon onto a serving plate and shape into a mound. 
 
 |  | 4. Coat exterior of salad mound with a thin layer of mayonnaise. 
 
 |  | 5. Garnish top with remaining ¼ cup green beans.
