Whipped cream dressing and its variations are excellent for fruit salads, molded salads, and some vegetable salads.

What You Need:            (To Make: about 1 cup)

  • 1½ cup heavy cream
  • 1 to 2 tablespoons fresh lemon juice
  • Salt to taste or ¼ teaspoon
  • Dash white pepper

  • How To Cook:
    1. Whip cream until partially stiff.

    2. Add lemon juice, salt, and pepper, and continue whipping until stiff.

    3. Serve at once.

    THIS RECIPE MAY BE VARIED BY ADDING TO 1 CUP OF THE BASIC DRESSING ANY OF THE FOLLOWING:
    1. ANCHOVY: 3 minced anchovies and 1 teaspoon grated lemon rind.

    2. CUCUMBER: ½ cup diced, peeled cucumbers and ¼ teaspoon dried dill weed.

    3. FRUIT: ¼ cup crushed pineapple or berries.

    4. HORSERADISH: Omit lemon juice and add 2 tablespoons grated fresh horseradish.
