What You Need:

  • Fish Fillets (carp, pike, etc.)
  • Eggs
  • Salted grated cheese

  • How To Cook:
    1. Poach as described in Fish Cooked In White Wine, and then put the fillets into a baking dish.

    2. Make a bechamel sauce, remove from the heat and beat into 2 - 3 egg yolks (according to quantity).

    3. Cover the fish with salted grated cheese and put into the sauce.

    4. Put into a hot oven (450°F) to brown the top.
