What You Need:

  • 2 oz butter
  • A bouquet garni
  • 2 oz flour
  • Salt and pepper
  • 1 pint good brown stock
  • 6 tablespoons Madeira wine

  • How To Cook:
    1. Make a brown roux with the butter and flour, stir in the stock

    2. Add the bouquet garni and seasoning and simmer for 15 minutes, to reduce a little.

    3. Before serving, remove the bouquet garni and add the wine.
