What You Need:            (To Serve: 4 - 6)

  • 2 cups flaked cooked fresh salmon or canned salmon, drained
  • 1 cup diced celery
  • 2 hard-cooked eggs, shelled and chopped
  • About ½ cup salad dressing
  • 2 tablespoons chopped sweet pickles
  • 3 tablespoons sliced scallions, with some tops
  • 1 tablespoon fresh lemon juice
  • Salt, pepper to taste
  • Crisp lettuce leaves, washed and dried

  • How To Cook:
    1. Combine ingredients, except lettuce leaves, and refrigerate.

    2. When ready to serve, arrange lettuce leaves on a platter or individual plates and spoon salad over them.

    3. Garnish with capers, if desired.
