What You Need:            (To Serve: 4 - 6)

  • ½ pound fresh mushrooms, cleaned and sliced
  • ½ pound fresh green beans, stemmed and cut up
  • ½ pound fresh broccoli, cut up
  • 1 large onion, peeled and sliced
  • 2 garlic cloves, crushed
  • 1/3 cup peanut or salad oil
  • 1 tablespoon turmeric powder
  • 1 teaspoon ground cumin
  • ½ teaspoon ground red pepper
  • Salt, pepper to taste
  • Juice of 1 large lime or lemon

  • How To Cook:
    1. Wash und dry mushrooms, green beans, and broccoli.

    2. Saute onion and garlic in oil in a medium skillet until tender.

    3. Add turmeric, cumin, red pepper, salt, and pepper; cool 1 minute.

    4. Add vegetables and cook slowly, covered, until just tender and preferably a little crisp, about 10 minutes.

    5. Remove from heat; cool.

    6. Add lime or lemon juice and mix well.
