What You Need:            (To Serve: 4 - 6)

  • 2 cups peeled and chopped raw jicama
  • 1 medium-sized onion, peeled and chopped
  • 1 medium-sized green pepper, cleaned and chopped
  • 2 medium-sized tomatoes, peeled and sliced
  • 1/3 cup olive oil
  • 2 to 3 tablespoons fresh lemon juice
  • ½ teaspoon dried oregano
  • Salt, pepper to taste

  • How To Cook:
    1. Put jicama and vegetables in a salad bowl.

    2. Combine remaining ingredients and pour over salad.

    3. Mix and serve at once.
