What You Need:            (To Serve: 4)

  • 4 ripe or preserved kumquats, sliced
  • 2 cups chopped fresh or canned pineapple
  • 1 cup halved orange sections, peeled and membranes removed
  • ½ cup mayonnaise
  • 2 tablespoons pineapple or orange juice
  • ¼ teaspoon ground ginger
  • Dash of salt
  • Crisp lettuce leaves, washed and dried
  • 2 tablespoons chopped macadamia nuts or almond slivers

  • How To Cook:
    1. Combine kumquats, pineapple, and oranges in a medium bowl.

    2. Mix mayonnaise, pineapple or orange juice, ginger, and salt.

    3. Just before serving, add to fruits.

    4. Serve in lettuce cups and sprinkle with nuts.
