  • 1 large green pepper, cleaned and minced
  • 1 large sweet red pepper, cleaned and minced
  • 1 medium-sized carrot, scraped and grated
  • 2 cups diced raw cauliflower
  • 1 large onion, peeled and minced
  • 2 tablespoons minced ginger root
  • 1/3 cup sugar
  • 1/3 cup vinegar
  • Salt, pepper to taste

  • How To Cook:
    1. Put peppers, carrot, cauliflower, and onion in a large bowl.

    2. Combine remaining ingredients in a small saucepan; bring to a boil; boil 2 minutes.

    3. Pour over vegetables and cool.

    4. Refrigerate at least 24 hours before serving.
