What You Need:            (To Serve: 4)

  • 1 pound fresh spinach leaves
  • 1/3 cup salad oil
  • 6 scallions, cleaned and sliced, with some tops
  • cup sliced radishes
  • 2 cups sliced raw cauliflower flowerets, washed and dried
  • 2 to 3 tablespoons wine vinegar or fresh lemon juice
  • 1 garlic clove, minced or crushed
  • 6 flat anchovies, drained and minced
  • Salt, pepper to taste

  • How To Cook:
    1. Wash spinach; cut off tough stem ends; remove bruised leaves; dry; refrigerate or put in a salad bowl.

    2. Add oil; toss lightly.

    3. Add remaining ingredients; toss.

    4. Serve at once.
