What You Need:            (To Serve: 4 - 6)

  • 1 medium-sized head red cabbage
  • 3 tart red apples, cored and sliced
  • 4 scallions, cleaned and sliced, with some tops
  • About ½ cup sour cream
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon sharp prepared mustard
  • Salt, pepper to taste

  • How To Cook:
    1. Trim cabbage and cut into halves; remove any wilted leaves; cut out core; shred finely; wash; dry; refrigerate.

    2. When ready to serve, combine with apples and scallions in a salad bowl.

    3. Mix remaining ingredients; add to salad; toss.
