What You Need:            (To Serve: 4 - 6)

  • 2 cups minced meat
  • ½ cup pine kernels
  • Butter for frying
  • 2 pound aubergines
  • Fat for frying
  • 4 cups tomatoes
  • 1 tablespoon salt
  • 1 teacupful water

  • How To Cook:
    1. Fry the meat and the pine kernels in the butter.

    2. Peel aubergines and cut them lengthwise; fry in the fat.

    3. Cut the tomatoes in slices and place over the bottom of a saucepan; season and add a layer of aubergines followed by one of the meat mixture.

    4. Continue until all ingredients are used up, seasoning each layer.

    5. Pour the water over and bake in a slow oven 325°F for about an hour.

    6. Serve with rice.
