Turkish boerek can be made into very small rolls, triangles or other shapes and served as canapes; when larger, they make a good appetizer, while a very large boerek makes the main dish of the meal.

What You Need:            (To Serve: 4 - 6)

CHEESE FILLING FOR BOEREK
  • ½ pound cheese (cream or cottage cheese)
  • 2 tablespoons butter
  • 1 egg
  • ½ cup milk
  • ¼ cup chopped parsley

  • How To Cook:
    1. Turkish boerek may be made of strudel pastry which is on sale in some shops, or your own puff paste rolled thin as tissue paper.

    2. Cut pastry into desired size and brush with melted butter.

    3. Place a teaspoon (or more) of filling on each piece of pastry, and roll up or fold over quickly, handling the dough as little as possible.

    4. Place on greased baking sheet and brush with melted butter.

    5. Bake in moderate oven (375°F) until golden and crisp - 25 minutes.

    CHEESE FILLING FOR BOEREK:
    1. Soften cheese with fork, cream butter, and combine.

    2. Add egg, milk and parsley, and mix well.

    OTHER FILLINGS:
    1. Left-over cooked meat or chicken, chopped, and then mixed with 1egg and a little chopped onion and parsley.

    2. Chopped spinach and onion blended with a little milk and butter.

    3. As a dessert-chopped nuts, cinnamon and sugar plus melted butter or honey syrup.
