2 cups spinach
1 medium onion
Salt
Cayenne pepper
4 tablespoons olive oil
3 tablespoons lemon juice
A few walnuts
2½ cups flour
Oil for frying

How To Cook: |

|
1. Wash, chop and drain the spinach and mix with minced onion, seasonings, 3 tablespoons oil, lemon juice and chopped walnuts.

2. Rub the flour with the remaining oil, 2 teaspoons salt and make dough with a little water.
|
3. Roll this out and cut into rounds; fill with the spinach mixture and close up.
|
4. Fry the turnovers in smoking hot fat until brown and crisp.
|
5. Endive, chard or sorrel may be used instead of spinach, or the turnovers may also be filled with fried minced meat, onions and pine kernels, or with cheese.
