What You Need:

6 oz sugar
¼ pint water
4 oz butter
4 oz semolina
2 oz seeded raisins
Grated rind of 1 orange
2 oz ground almonds
4-5 cardamom seeds
Powdered cinnamon

How To Cook: |

|
1. Put the sugar and water into a pan, and when the sugar has dissolved, bring to the boil; boil until the syrup thickens, then remove it from the heat.
|
2. Melt the butter, put in the semolina and brown it, then add the raisins, orange rind, ground almonds and cardamom seeds.
|
3. Finally add the syrup, and cook the mixture over a low heat, stirring all the time, until it is thick.
|
4. Pour into wetted moulds, and when cold, turn out and serve sprinkled with powdered cinnamon.
