In Turkey and Greece ready-made pastry sheets can be bought, which are called 'Yufka' in Turkey and 'Filla' in Greece. If ready-made pastry sheets are not obtainable they can be made at home, although it is a lengthy business and requires time and patience.

1 pound flour
1½ cups melted butter
2 eggs
1 teaspoon baking powder
1 teaspoon salt
A little water

How To Cook: |

|
1. Sieve the dry ingredients, add the beaten eggs and some of the butter, and then work to a stiff dough with a little water.
|
2. Divide the dough into several pieces shaped like balls and leave under a damp cloth for ½ hour.
|
3. Roll out each piece several times very thinly, brushing with melted butter every time. Cover and leave once more.
|
4. Roll out again into separate sheets, brush with melted butter and layout on a table, so that they do not touch each other.
|
5. Leave while you make the stuffing.
