What You Need:

  • 4 oz butter
  • 6 oz flour
  • 4 oz caster sugar
  • 3 oz coconut, grated
  • 2 oz corn flour
  • 1 teaspoon baking powder
  • 3 eggs
  • A little milk
  • Desiccated coconut

  • How To Cook:
    1. Rub the butter into the flour.

    2. Add all the dry ingredients and mix to a thick paste with the eggs and milk.

    3. Roll out, cut into fingers, brush with egg and sprinkle some desiccated coconut over them.

    4. Bake for 15 minutes in a moderate oven (350°F).
