What You Need:

  • A meringue case (see Pavlova Cake)
  • ½ teaspoon grated lemon rind
  • 3 egg yolks
  • A can of pineapple pieces
  • 1 tablespoon sugar
  • ½ cup strained pineapple syrup
  • ½ tablespoon butter
  • 1 teaspoon lemon juice

  • How To Cook:
    1. Make the meringue case using this recipe.

    2. Put all the other ingredients in a saucepan (keeping back a few pieces of pineapple for decoration) and cook over a low heat, stirring, until quite thick.

    3. Cool, then pour the mixture over the meringue case and decorate the 'Pavlova' with the remaining pineapple.
