What You Need:            (To Make: 1 pie)

  • Short crust pastry
  • A little grated nutmeg
  • 2 eggs
  • 1 pint hot, but not boiling, milk
  • 1 cup grated coconut
  • 4 oz caster sugar

  • How To Cook:
    1. Line a pie plate with short crust pastry and bake it lightly.

    2. Beat the eggs, add the other ingredients; mix thoroughly and pour into the dish.

    3. Bake in a moderate oven (350°F) for about ½ hour, or until the filling is set.
