(Camarones Al Horno)
 
What You Need:            (To Serve: 2 - 4)

  • 1 pound prawns
  • 2 teaspoons aji salt
  • oz lard or margarine
  • pint (approx.) white sauce
  • 1 small onion, finely chopped
  • 1 small egg
  • 2 teaspoons finely chopped parsley
  • A little white wine (optional)
  • 1 tomato
  • Breadcrumbs

  • How To Cook:
    1. Shell the cooked prawns.

    2. Melt the fat and fry the onion, parsley and tomato, with the aji salt (which may be replaced by 2 teaspoons piquant table sauce); cook very slowly for about 20 minutes, stirring constantly.

    3. Mix the creamy white sauce with the contents of the pan, and then add the well-beaten egg and the prawns with a little white wine.

    4. Transfer to an ovenproof dish, cover the top with breadcrumbs and bake in a slow oven (325F) for 25 minutes.
