What You Need:            (To Serve: 2 - 4)

  • 3 pound shoulder of mutton
  • 1½ pints water
  • ½ pound onions
  • ½ pound celery
  • 1 - 2 sprigs of marjoram
  • Lemon thyme

  • How To Cook:
    1. Put a shoulder of mutton in a saucepan, cover with water, and bring to the boil.

    2. Add sliced onions, finely chopped celery, sprigs of marjoram and a little lemon thyme.

    3. Simmer for 2½ hours.
