What You Need:

  • 1 pint cream
  • 1½ oz sugar
  • Peel of ½ a lemon
  • 4 egg yolks
  • A stick of cinnamon
  • Sugar for topping

  • How To Cook:
    1. Boil the cream with the thinly pared lemon rind and the cinnamon, cool slightly and pour over the beaten egg yolks, stirring until the mixture is almost cold.

    2. Add the sugar and stir well, strain into a dish and leave, preferably overnight.

    3. Before serving, strew the top thickly with sugar and brown under the grill.
