What You Need:

  • A few veal chops
  • Sliced yolks of hardboiled eggs
  • Mixed spices and chopped herbs
  • A few truffles or mushrooms
  • A few slices of lean bacon
  • Stock
  • Forcemeat balls
  • Pastry

  • How To Cook:
    1. Trim the meat from the bones and flavor highly with mixed spices and herbs.

    2. Put in a pie dish with the bacon, forcemeat balls, yolks of eggs and either truffles or mushrooms.

    3. Moisten with stock, cover with pastry and bake for 1½ - 2 hours in a moderate oven (350°F).

    4. Serve with Turnip Purry.
