What You Need:            (To Serve: 2 - 4)

  • 2 onions
  • 4 tomatoes
  • 4 eggs
  • 3½ oz butter or oil
  • Salt and pepper
  • 3½ oz minced meat (optional)

  • How To Cook:
    1. Slice and fry the onions and tomatoes in the butter until soft.

    2. Season to taste.

    3. Break the eggs into the mixture and cook until set.

    4. Put the mixture into individual bowls.

    5. If minced meat is being used, this should be cooked with the onions and tomatoes before adding the eggs.
