What You Need:            (To Serve: 2 - 4)

  • 2 pound chicory
  • ½ pint milk
  • Salt and pepper
  • 4 oz grated Gouda cheese
  • 1 oz butter
  • 1 oz flour
  • Piquant table sauce

  • How To Cook:
    1. Cut a very thin slice from the base of the chicory, then insert a pointed vegetable knife and remove the core, which is apt to be bitter.

    2. Wash the chicory and boil it for 20-30 minutes in plenty of salted water, until tender.

    3. Drain well, and cover with a cheese sauce.

    CHEESE SAUCE:
    1. Melt the fat, add the flour and blend into a smooth paste.

    2. Add the milk, stirring well, boil for 5 minutes, remove from the heat and add the grated cheese.

    3. Season to taste with the table sauce, salt and pepper.
