What You Need:            (To Serve: 4 - 6)

  • ½ pound mushrooms
  • Paprika
  • 4 cold cooked medium potatoes, thinly sliced
  • 2/3 cup white wine
  • 1 cup sour cream
  • 2 tablespoons butter
  • 2 pound fresh fillets of sole
  • 1½ teaspoons of salt
  • Parsley or chives
  • ½ teaspoon pepper

  • How To Cook:
    1. Start heating oven to moderate (375°F).

    2. Wash, trim and slice mushrooms.

    3. In buttered 12-inch by 8-inch by 2-inch baking dish, arrange potatoes; top with mushrooms; dot with butter, sprinkle with half of salt and pepper and ½ teaspoon paprika; pour wine over all.

    4. Spread with half of sour cream.

    5. Arrange pieces of fish over all, sprinkle with rest of salt and pepper and ½ teaspoon paprika; top with rest of sour cream.

    6. Bake 30-40 minutes or till fish is done; sprinkle with paprika and parsley and serve.
