  • Bay leaves
  • 1 large onion cut in slices
  • Sliced tomatoes
  • 1 pound lean lamb
  • Oil and onion for marinating
  • Pieces of tender liver, kidney, etc.

  • How To Cook:
    1. Beat the lamb, cut it into small squares and marinade it in a little olive oil to which some finely chopped onion has been added.

    2. Impale all the meats, bay leaves, sliced onion and tomatoes alternately on skewers and grill under a fierce heat, turning the skewers frequently, until the meat is well cooked.
