What You Need:            (To Make: 1 tart)

  • ½ pound rich flaky pastries
  • 2 oz sultanas
  • 1 pound apples
  • Grated rind of 1 lemon
  • 4 oz sugar
  • 2 egg whites
  • ½ teaspoon powdered cinnamon
  • 4 oz caster sugar for meringue

  • How To Cook:
    1. Make the pastry, line a shallow tin with it and bake "blind" in a hot oven (450°F) for 20-30 minutes.

    2. Slice the apples and stew them with the sugar, cinnamon, sultanas and lemon rind.

    3. Spread this mixture over the pastry and decorate with a meringue mixture made by whisking the egg whites and folding in the sugar.

    4. Bake in a slow oven (300°F) until the meringue mixture is crisp.
