What You Need:            (To Make: 1 cake)

  • 8 oz cream cheese
  • Powdered vanilla (or vanilla essence to flavor)
  • 6 egg yolks
  • 2 oz melted butter
  • 8 oz caster sugar
  • Glace icing

  • 8 oz flour
  • 2 oz sugar
  • 4 oz butter
  • 1 egg yolk

  • How To Cook:
    1. Tie the cream cheese in muslin and squeeze out the moisture.

    2. When the cheese is dry, grate or crumble it into a mixing bowl, and add the egg yolks, melted butter, sugar and a little powdered vanilla.

    3. Beat thoroughly till the mixture is quite smooth and with no lumps (this will take about hour).

    4. Make the pastry with the flour, butter, sugar and egg yolk, and cover the bottom of a greased baking tin with it.

    5. Place the cheese mixture on top, and bake for 1 hour in a moderate oven (350F).

    6. When the cake is cold, cut it into squares and coat each with a little glace icing.
