What You Need:            (To Make: 1 cake)

FILLING
  • Boiling water
  • 1 oz dried fruit
  • 5 oz poppy seeds
  • 1 egg white
  • 2½ oz sugar Almond essence
  • 1 oz butter
  • Lemon rind

  • How To Cook:
    1. A rich yeast pastry rolled out as for a Swiss roll filled with a rich poppy-seed mixture, rolled up as for a Swiss roil, baked and finished with a glace icing.

    FILLING:
    1. Pour some boiling water over the poppy seeds and leave to stand for 3 hours.

    2. Drain overnight.

    3. Mince three times or pound in a mortar.

    4. Add the remaining ingredients, flavoring with essence and lemon rind to taste.
