What You Need:            (To Serve: 4 - 6)

  • 3 pound topside of beef
  • 10 peppercorns
  • 4 oz bacon
  • 1 bay leaf
  • Pepper and salt
  • Sprig of thyme
  • 1 carrot
  • Pinch of nutmeg
  • 1 onion
  • 1 slice rye bread
  • Stock
  • ½ cup red wine

  • How To Cook:
    1. Cut the bacon into strips and push the strips into holes in the beef.

    2. Rub the meat with pepper and salt and put into the roasting pan with the diced vegetables.

    3. Add a little water and roast slowly, basting all the time and adding more stock if necessary (325°F).

    4. When the meat is done (about 2 hours) skim the gravy and add all the other ingredients, including the bread which has been soaked in the wine.

    5. Return to the oven until thoroughly hot, dish up the meat, strain the gravy and pour over.
